the perfect tomato sauce...





1/4 cup extra virgin olive oil
3 cloves garlic, peeled & whole
1 tbsp. tomato paste
one 35 oz can whole peeled Italian tomatoes with their juices, crushed by hand
pinch of sugar
2 basil sprigs
salt & freshly ground pepper

First take a picture of yourself wearing an apron. This helps to put you in the "chef" mood, a little Rocky music doesn't hurt either...
Then, in a large saucepan, heat the oil. Add the garlic and cook over moderate heat, stirring occasionally, until golden- about five minutes. Add the tomato paste and cook, stirring for one minute. Add the canned tomatoes with their juices, stir in the sugar and basil, season with salt and pepper, and bring to a boil. Simmer the sauce over low heat, stirring occasionally, until it thickens and is reduced to 3 cups. (about 30 n=min)
Season again with salt and pepper, dicscard the basil sprigs and whole garlic pieces.
*sauce can be refrigerated for up to three days.
